It was back in 1996 that Simon and his father Tim opened Di Marco’s restaurant in the former premises of Chas L Clarke hardware store in Uckfield High Street.

They sold the business in 2003, then opened the 272 restaurant in Newick, before taking over The Bull at Newick, and then re-designing and running The Lamb at Piltdown – now The Piltdown Man.

Future

Simon, who lives in Newick and is married to Carly with two children Molly, 16, and Theo, 12, says he has enjoyed his first few weeks at The Cock and is looking forward to the future.

Ian Ridley, director of Ridley Inns, which owns The Cock – and also The Highlands Inn at Uckfield, and The Tavern at Heathfield – said the business was delighted to announce the appointment of Simon.

“The Cock Inn has been in the Ridley family since 2005 and has gained a great reputation for food and service, with many loyal customers returning week in week out.

High standards

“As the working directors are now responsible for three pubs we need to have in place proven managers in the hospitality industry, who will maintain our high standards of service.

“Simon Maltby brings with him 25 years experience of running successful businesses in the area, and will perhaps be most remembered for the launch of Di Marco’s in Uckfield in 1996.”

• Di Marco’s was sold to Simply Italian in 2003, and then to Luna before being sold again to The Picture House, as it remains today.
