About Nose2Tail Family Butchers

Quality, provenance and price are the foundations of a business being built by farmer Luke Watson and butcher Danny Martin at Nose2Tail family butchers in Piltdown.

They guarantee the quality and provenance because the pork and beef come from Luke’s Burgess Hill farm, while the lamb comes from Luke’s father-in-law’s farm at Golden Cross.

Danny brings the best of his knowledge to the mix from 15 years of working as a butcher in wholesale, retail and in farm shops.

The price of meat at Nose2Tail at Ashdown Farm is a little higher than supermarkets but the two say it is worth paying because of the quality, taste, and provenance.

They sell every cut of meat you might request for any occasion, whether you would like it simply presented or specially prepared. For example your chicken can be boned, stuffed and marinated, your breast of lamb layered with stuffing or your beef turned into the classic beef Wellington.

Nose2Tail makes its own sausages with varieties including lamb and mint; pork, leek and chilli; pork and apple, and Cumberland.

There are venison sausages and Merguez sausage too.

The beef is aged for a minimum 30 days – the norm in the industry is 21 – butcher Danny makes all the pies, and he and Luke cure and smoke gammon, bacon, cheese and salmon, at Nose2Tail.

The rest of the produce in the shop is carefully chosen from local sources with quality being the key word, closely followed by an ethos Luke and Danny relate to.

So there is cheese from places such as the High Weald Dairy, milk in glass bottles from Ringmer – there’s a returnable deposit on the bottles – and eggs from the family-run Mac’s Farm in Ditchling.

Chutneys come from the campaigning business Auntie Vals at Storrington, which aims to get people with disabilities into work, and pear and apple juices come from Buxted Oast Farm.

Danny and Luke would like to hear from you with any special requests for meat products. They also offer meat boxes which can be delivered to your door each Monday for about £20, though you can request extras too.
